Saucy Raspberry Rhubarb

This was submitted as a dessert for the Vitality Project Cookbook.

  • 6 c. chopped fresh rhubarb or 2 pkgs. (16 oz. each) frozen cut rhubarb thawed
  • 1 c. apple juice
  • 6 Tbsp. packed brown sugar
  • 4 c. fresh raspberries
  • 4 to 8 oz. sour cream
  • 4 to 6 c. granola for topping. optional

  • Heat rhubarb, apple juice, brown sugar and 2 cups of the raspberries to boiling in three-quart saucepan. Reduce heat. Simmer uncovered about 10 minutes, stirring occasionally, until rhubarb is soft. Cool about 30 minutes. Stir in the remaining 2 cups of raspberries.

    Spoon into serving dishes. Top with 1/4 to 1/2 cupÊgranola and 1 Tbsp. sour cream.

    Granola is optional. This tastes great with just the sour cream.

    Serves 12.
