Big Night on Campus to feature big cake

The annual Big Night on Campus is from 5:30 to 8 p.m. Thursday at Riverland Community College’s West Building on the Austin campus.

The event is open to all ages. Participants may take tours, learn about programs, try hands-on activities, be entertained and win prizes. A special feature this year is the creation of the Second Biggest Cake in Minnesota.

Riverland and Hy-Vee in Austin will partner to bake a giant cake at Big Night On Campus. Proceeds from cake sponsorships and sales will raise money to create an endowed scholarship fund for Riverland students. All donations will be doubled as every dollar raised, up to $10,000, will be matched by an anonymous donor.

The cake, deemed the Second Biggest Cake in Minnesota, will be about 8 feet long by 10 feet wide, weigh more than 270 pounds and serve more than 3,000 people. According to the Midwest Baking Association, the largest cake in Minnesota was commissioned by the Minnesota Lottery and created by Grandma’s Bakery. The cake served more than 90,000 at the Taste of Minnesota.

Opportunities to sponsor pieces or sections of the cake are available to businesses and individuals. Sponsor logos and names will be displayed in the frosting. People may also make a donation that day and have their photo taken with the cake from 5 to 6 p.m. Pieces will be sold throughout the evening.
